The Vegetarian Society Cookery School have something extremely exciting on the horizon and are busy planning and developing the new Cookery School. Perhaps a little optimistic on the proposed opening date! But they should be up and running around May this year, with a fantastic new city centre venue. The 1st course taught you how to use the main vegan substitutes in Pastry and increased your self-confidence in vegan baking through 5 iconic English desserts.
Level 2 will explore some more elaborated, fine dining desserts, and teach you how to master taste and texture combinations.
And this in a trip around the world, from the USA and its iconic pecan pie, to the UK with an exotic pineapple crumble, and then to Germany (Black Forest) and France (Le fraisier). A modern twist will pave the way for new ideas and empower everyone – Foodies, Chefs, Business owners.

Today, I made this delicious cheesecake during a One to One Online course with the lovely Pastry Chef Danielle Maupertuis (@dmaupertuis).
The lesson was awesome and I learned so much! It is not just about making a recipe, but also understanding the rich and delicate process of the pastry.
At the same time, it was fantastic because it is accessible to passionate vegans.
